Eggplant caviar - recipe

Ingredients
- Eggplant - 2 pcs
- Tomatoes - 2 pcs
- Bulgarian red pepper - 1 pcs
- Carrot - 1 pcs
- Onion - 1 pcs
- Garlic (cloves) - 2 pcs
- Vegetable oil - 2 tbs
- Lemon juice - 1 tbs
- Parsley
- Coriander - 0.33 tsp
- Salt

Eggplant caviar Directions

Preparation:
1. Cut the eggplants into cubes.
2. Cut the bell pepper in half, remove the seeds and cut into slices.
3. Finely chop onions, carrots, garlic, greens.
4. Cut the tomatoes into cubes.
5. Put the eggplants, onions, peppers, carrots, garlic and tomatoes in a bowl. Season with salt, sprinkle with coriander, herbs, add vegetable oil and mix.
6. Close the lid and cook on Simmer for 40–45 minutes.
7. After cooking, put the caviar on a dish and sprinkle with lemon juice before serving.
