Squash caviar - recipe
Ingredients
- Zucchini - 2 pcs
- Eggplant - 1 pcs
- Tomatoes - 2 pcs
- Sweet pepper - 1 pcs
- Carrot - 1 pcs
- Onion - 1 pcs
- Garlic (cloves) - 2 pcs
- Vegetable oil - 30 ml
- Lemon juice - 1 tbs
- Parsley
- Coriander - 0.5 tsp
- Salt

Preparation:
1. Peel the courgettes and cut into cubes, cut the eggplant into the same cubes without removing the peel. Remove seeds and partitions from sweet peppers and cut into small squares. Finely chop onions, carrots, garlic and herbs. Remove the skin from the tomatoes and cut into small cubes.
2. Put all vegetables, except tomatoes and herbs, in a bowl. Season with salt, sprinkle with coriander, drizzle with lemon juice, add vegetable oil and stir.
3. Turn on the mode "Vegetables / Fry" for 30 minutes. Fry vegetables, stirring occasionally so as not to burn. At the end of the program, almost all the juice from the vegetables should have evaporated.
4. Add tomatoes and parsley, stir. Close the lid and turn on the Vegetable / Stew setting for 30 minutes. Stir occasionally during cooking.
5. Transfer the prepared caviar to clean jars and sterilize.
Note:
Ready caviar, if desired, can be chopped in a blender until smooth and served as a paste for sandwiches.
