Since ancient times, saffron infusion has been used in oriental cuisine to color dishes and give them a characteristic aroma, in particular for pilaf. To prepare saffron infusion, take 1 g of saffron and pour 100 ml of boiling water, cover and leave for 2 hours, then strain. The infusion will turn out to be brown in color with a pleasant smell.
